Howdy!
My name is Bryan, but as my forum handle suggests, I go by the online moniker "Claark". I was born and raised in Texas, grew up in a VERY small town on the Texas coast but now I call Houston home. I used to be a computer nerd for The State of Texas, but I've spent the last 8 years working as a professional chef...left a 6 figure salary to work for 10$/hr LOL

Some things to talk about....I've lived in Rhode Island, Nevada, and Houston. I love sports, boobs, booze, and anything with 2 wheels and a combustion engine. I try to garden, love craft beer and of course food....Hmmm... I think that's it for now. My life's an open book, no subject is taboo so thanks for playing and ask away.

Whats your favourite dish to make?

If you were to cook to impress a girlfriend/sexual partner/wife, what would you cook?

Two very different questions… My favorite thing to make is Pasta from scratch. I can't really explain why.... I'm Italian and that may have something to do with it but it isn't something from my childhood… Maybe it just speaks to my heritage.

Now if were talking about panty dropping food… I would definitely make something with seafood… Probably something with bacon and panseared scallops. 2 of my favorite things to eat!

Is that a zucchini in your hands or are you just happy to see me?

WOW nice! Most people think it's a cucumber! (Dumbasses)

To answer your question...

Yes it's a zucchini. A friend brought that by my office. His dad grows world champion vegetables. That was a small one. :).

And you know damn well I'm ALWAYS happy to see you!

Cucumbers are quite cylindrical and straight, while zucchini will have a more bulbous base with a decent curve. It's not that hard.

Top 5 craft brews?

Texas! Nice. I was just in Austin, Montgomery, and College Station this past weekend. Everything really is bigger in TX... food portions, servings, lots of trucks still, people, land... but what's the biggest thing in Texas?

What should I see when I visit Houston?

Do you ever work on film sets?

Have you worked for/with any celebrity chefs?

Fame is relative. I worked for one of the top chefs in Las Vegas for 2 years, but no one you'd see on TV. I did meed Scot Libfried (Hells Kitchen) at JWU, twice. He's alum

Besides my apartment (We have a badass pool) Asuming you're visiting in march, which you recomend, you'd have to see the Houston Livestock Show and Rodeo. Make a trip down to Galveston Island, and stop in at Kemah Boardwalk for the afternoon. Be sure to take your lady friend out to Hermann Park also. Its fun!

Not on a motion picture set, but at the Palms casino, we did carer several music video shoots.

Would you consider doing or have you done any competitive cooking? (Sorry, I love chopped and cutthroat kitchen)

What is the one thing you want to cook but haven't had the chance to yet?

Oh and what was the inspiration behind the switch?

Why Claark?

Sorry guys, had to work a double yesterday. So here we go!

What is the one thing you want to cook but haven't had the chance to yet?

My fetish, much more than a dream, is to hand dive for scallops and grill them on the beach. I LOVE scallops and I'd get major wood being able to harvest them from the sea.

Oh and what was the inspiration behind the switch?
I grew up in restaurants. I had my first job when I was 10 working in my aunts diner. But when got into college, I thought money=happiness so I went the Technology route. I worked in videoconferencing for 12 years. We designed telemedicine systems on a global scale. It was some pretty amazing stuff. But as most technology does, it became commonplace. It didnt require specialized people anymore and we were on out way out. I saw the writing on the wall. I always told people that if I ever won the lottery, I was going to culinary school. So I sold my condo and all my "Stuff", cashed in my 401k (Wish I hadn't done that LOL) and went to JWU

Why Claark?
Because Grizwald....

Kidding.

So one of my first online multiplayer games was Counterstrike. Now...I'm not talking any of the shit you guys know of today. My friend ran one of the very first Counter-strike servers in the country (Off a T-1 in his apartment in Houston) Back when it wasn't even 1.0. We're talking 16...17 years ago. So Here I was pressed for an "online handle" WTF? I can barly remember my own name! I chose "MrClark" as my handle. From John Clark the only book I ever read outside of school, Rainbow Six. Fast foward to toe first round of beta testing for WOW. Guess who got selected. Well I had read all this stuff about character names and name restrictions so I tried to come up with something a little more.....orkish? So I changed it to Claark.

Which bear is best?

I like Red Pandas....they're so cute
