Green Plantain and Sausage Picadillo (Stew)

Hi guys today I made one of my favorite dishes that my mom absolutely knocks out of the park, I did my best and it came out actually VERY similar and tasty.

so.. Here is the recipe if you guys want to try it.

Ingredients
3 VERY green plantains
1lb of high quality pork sausage
1 big onion
3 gloves of garlic
2 large ripe tomatoes
1 bunch of coriander
salt, pepper

peel and chop in half the plantains
in a large pot add water and the plantains with a spoon of salt
let it cook halfway through then take them out

dice the onions
chop the garlic
dice the tomatoes
in a large pan stir fry the onion until fragrant at medium heat
add in the garlic and stir for about 1 min
now add the sausage, peel off the casing and throw it away.
break down the sausage while frying in the pan
after about... 3min add in the diced tomatoes, stir...
lower the heat to minimum
let the tomatoes break down from heat and become saucy
add water from the cooking plantains as needed if it becomes too dry
salt.. pepper... to taste

take the still warm plantain halves and dice them up
add the plantain to the sausage tomato sauce and mix gently to no break them down too much

remove the roots from the coriander and wash real well
now chop it finely and mix into the stew turn off the heat immediately

you can serve over rice or simply eat it with tortillas (like a taco)

This just made me shit my pants by reading it. But for those not as sensitive as me sounds awesome!
 
I've never been fond of plantains but I'd definitely give that a try, looks good man.
